Spicy Pasta with Sweet Potatoes

from Better Homes and Gardens magazine | makes 4 servings

Serve with lightly seasoned baked chicken breasts and a salad.

1 large sweet potato, peeled and cut into small cubes
1 Tbs. olive oil
1/2 tsp. each sugar, chili powder, and cinnamon
8 oz. dry rigatoni
1/4 c. peanut butter
3 oz. cream cheese, cut into cubes
2 tsp. Asian chili sauce
1 Tbs. soy sauce
3-5 green onions, thinly sliced

Preheat oven to 450*. Toss sweet potato cubes in a bowl with olive oil, sugar, chili powder, and cinnamon. Spread on greased baking sheet. Bake 20 min. or until tender.

Meanwhile, cook pasta. Drain, reserving 1 c. of the pasta water.

In a saucepan, combine remaining ingredients and the reserved pasta water. Stir over medium heat until heated through and smooth. Thin with additional water if necessary.

Combine sweet potatoes, pasta, and sauce.
