Moroccan-Inspired Chicken Carrot Raisin Stir-fry

3 cloves garlic, minced
1 small onion, chopped
1 chicken breast, chopped
1 large carrot, shredded
1/2 cup raisins
2 cups brown rice, cooked
cumin
cinnamon
paprika
salt
1/4 cup apple juice

Saute garlic and onion in olive oil in a large skillet until fragrant. Add chicken and cook. Add shredded carrot, raisins, brown rice, spices and salt to taste. Stir-fry until carrot begins to be soft. Add apple juice as needed toward the end of cooking for moisture.
