Apple-Nut Bread

from Cheryl Forbes | makes 2 loaves

2 c sugar
1 c vegetable oil
3 eggs
2 tsp vanilla
3 c flour
1 tsp salt
1 tsp baking soda
1 tsp cinnamon
3 c diced apples
1 c chopped nuts
cinnamon-sugar to sprinkle on layers

Mix together baking ingredients. Add in apples and nuts. 

Pour a quarter of the batter into the first loaf pan and sprinkle with cinnamon-sugar. Pour another quarter into loaf pan and sprinkle with cinnamon-sugar. Repeat with the second loaf pan.

Bake at 325* for 1 1/2 hours. Cool for 10-15 minutes and turn out onto wire rack to cool.
