Peanut-Chicken Bowl

This is a great meal to practice your chopsticks skills.

2 pkg. Ramen noodles
1 bag frozen stir fry vegetables
1 1/4 c. water
1/4 c. peanut butter
1/4 c. soy sauce
2 Tbs. brown sugar
1 Tbs. corn starch
1/2 tsp. cayenne pepper
1/4 tsp. cumin
1/2 tsp. garlic
1/2 tsp. onion flakes
1/4 tsp. ginger (grated fresh is best)
2 c. chopped, cooked chicken
1/4 c. peanuts

In large saucepan, bring 2 quarts of water to boil. Break up noodles and add to water with vegetables. Return to boil; reduce heat. Boil uncovered for 3 minutes or until noodles and vegetables are tender. Drain and return to pan.

In medium saucepan whisk water, peanut butter, soy sauce, brown sugar, corn starch, and seasonings. Stir over medium heat until thick and bubbly. Add chicken. Heat through. Pour over noodles and veggies. Stir and top with peanuts.
