Jiaozi (Chinese Dumplings)



serves 6 | from Yao Yujie

Note: Ingredient amounts are approximate and can be adjusted to taste.

WonTon Wraps (keeping them damp is essential)

Pork (1 pound for 6 people) (half or more lean meat and half or less fat)
Salt (2 tablespoon)
Soy sauce (2 tablespoon)
Five Spice (1/2 tablespoon)
Sesame oil (3 tablespoon)
Vegetable oil (5-6 tablespoon)
Ginger power (1/2 tablespoon)
5-6 green onions (smashed)

Mix pork, onions, oils, and seasonings together. Put a small amount in a wrap. Moisten the edges and form into dumplings. Fill a large stockpot about halfway with water. Add a little salt (so that the dumplings won’t stick to each other)and bring to a boil. Add dumplings and return to boiling. Add about 2 cups of cold water. Bring to a boil again and add cold water. Bring to a boil again and add cold water. When water comes to a boil the 3rd time, the dumplings are ready. Serve with a dipping sauce of soy sauce and rice vinegar, or add hot chili oil to the dipping sauce.
