Rinse potato leaves and separate leaves from the stem. Prepare chopped garlic (two pieces or more), chopped onion (1/4) or green onion (1 or 2 pieces), and ginger (small piece). Heat oil on high till it turns warm and put in prepared garlic, onion, and ginger. Stir until it smells good. Reduce the heat between high and medium. Throw in potato leaves and stir till they begin to shrink. Put in oyster sauce (about 2 tablespoon). If it looks it’s going to burn, reduce the heat to medium. When the leaves shrink and look eatable (you can tell by the dark green color), turn off the heat and add salt.
