Tortilla de Patatas

5 potatoes
1/2 green pepper
1 onion
6 eggs
olive oil
sea salt

Cut the potatoes, green peppers, and onion into small cubes. Season potatoes with salt and fry in olive oil until just tender. Remove from pan and set aside in a medium bowl.

Saute the green peppers just a little, add onions, and saute until tender. Add to potatoes.

Beat the eggs and add them to the potatoes, peppers, and onions.

In a medium skillet, heat 2 Tbs. olive oil. When warm, pour mixture into the pan. Cook until light brown on one side, then flip over and cook the other side until light brown (approximately 1 hour).
