Spanish Gazpacho

from Regla Moore

6 fresh tomatoes
1/2 green pepper
1 cucumber
1 garlic clove
2 Tbs. olive oil
3 Tbs. wine vinegar
1 c. water
salt to taste

Cut tomatoes, peppers, and cucumber into pieces. Crush garlic clove. Combine vegetables and garlic in a blender and mix until almost liquid. Add water, olive oil, vinegar, and salt and blend until completely liquid.

Refrigerate until cold and ready to serve.
