1 (10 oz.) block sharp Cheddar cheese, shredded
1 1/2 cups flour
1/2 cup unsalted butter, cut into 4 pieces and softened
1 tsp. salt
1/2 tsp. dried crushed red pepper
2 Tbs. half-and-half
Pulse first 5 ingredients in a food processor or mix with a pastry blender in a bowl until mixture resembles coarse crumbs. Add half-and-half, and process or mix until dough can be formed into a ball. Chill.
Note: Dough may be wrapped in plastic wrap, sealed in a freezer bag, and chilled for up to 3 days.
Preheat oven to 350*. Roll dough on a lightly floured surface until 1/8 inch thick. Cut into strips, triangles, or shapes, as desired. Bake 18-20 minutes or until edges are well browned. Cool on baking sheets on wire racks.
