Flan

from Regla Moore

10 egg yolks
1 can condensed milk
2 tsp. vanilla
1 c. sugar

In a 8 1/2 inch baking dish, caramelize the 1 c. of sugar.

Blend the egg yolks, condensed milk, and vanilla and pour into the baking dish over the caramelized sugar.

Preheat the oven to 360* and bake the flan using Mary's Bath (place baking dish inside a large pan filled halfway with water). Bake for 30 minutes, then lower the temperature to 250* and bake for 2 hours.

Allow to cool and then refrigerate until completely chilled. Serve when chilled by inverting pan over a serving dish and allowing the caramel to drip over the custard.
